Goan Taste Pork & Okra Curry - Sousa's Kitchen

 INGREDIENTS

  • 1 1/2 Cup Grated Coconut
  • 6 Dry Chilies
  • 7 Garlic Cloves
  • 1 1/2 Tsp Cumin Seeds
  • 2 1/2 Tsp Salt
  • 1/2 Tsp Turmeric Powder
  • 1 Cube Maggie
  • 1 Tbsp Dry Coriander
  • 2 Tsp Sugar
  • 1 lbs Pork
  • 2 Tsp Turmeric (soaked in water)
  • 1 Large Onion
  • 1 Tomato
  • 1 Green Chile
  • 400 ml Coconut Cream
  • 2 Tbsp Oil
  • 1 1/2 Tsp Ginger Garlic Paste
  • 6 Kokum Petals
  • 10 Okra
  • 1/2 Tsp Black Pepper

Method
  1. Add 1 Tsp of Salt to the Okra, and then add 1 Tsp of Salt to the Pork, then add the black pepper, and the ginger garlic paste, and mix all together. 
  2. In a blender add the grated coconut, cut the red chilies and add them into the blender, then add the Garlic Cloves, Cumin Seeds, Turmeric Powder, Dry Coriander, add some water and blend until smooth. Add water as needed. 
  3. Add some oil into a pan over medium heat, then add the Okra and cook for about 3 minutes. Then remove the Okra and place aside.
  4. Add some more oil into a pan and place the pork into the pot, and cook for about 5 minutes, then remove and place aside. 
  5. In a pot add the rest of the oil, and set the heat to medium. Then add in the Large Diced Onion, Tomatoes, Green Chilies, and Maggie Cube, then add the mixture from the mixer, and cook for about 5 minutes.
  6. Then add the Pork into the pot and add the Coconut Cream. Next add the sugar, and continue to cook. As water as needed. Then add the Kokum Petals, Okra and mix together. Simmer on medium heat for 10 minutes
  7. Serve hot with rice or bread. Enjoy!!
