INGREDIENTS
- Beef Shank / Beef - 4 lbs
- 2 Tbsp Dry Coriander
- 2 Tsp Cumin Seeds
- 1 Tsp Black Pepper
- 4 Tsp Salt
- 1/2 Tsp Nutmeg
- 1 Tsp Chilly Powder
- 2 Pieces Mace
- 8 bay leaves
- 1 Tbsp Chilly Flakes
- 4 Pinches of Saffron
- 1 Tbsp Garlic Ginger Paste
- 1/2 Tsp Turmeric Powder
- 5 Black Cardamom
- 6 Pieces Green Cardamom
- 9 Pieces of Cinnamon Sticks
- 8 Cloves
- 1 1/2 Cup Yogurt
- 2 Large Onions
- 2 Large Tomatoes
- 2 Cups Cilantro
- 2 Cups Mint
- 4 Cups Rice
- 2 Green Chilies
- 2 Cups Fried Onions
- 2 Tbsp Oil
- 1 Tbsp Kewra Water

Method
- First add the Dry Coriander, Cumin Seeds, Green Cardamom, Mace, Black Pepper, Nutmeg, Chilly Flakes, 1 Blake Cardamom, Cloves, 4 Cinnamon Sticks, 1 Pinch of Saffron, Chilly powder, and 1 cup of fried Onions into a spice mixer and grind till coarse.
- Then add the spices into the yogurt and mix together. Then add 1 chopped chilly, and 1 handful of cilantro and 1 handful of mint into the bowl, and mix everything together.
- In a Instant Pot add the oil, then add 3 pieces of cardamom sticks, and 3 bay leaves, and 2 black cardamom, then add the onions and sauté it all together.
- Once the Onions are sautéed, add in the beef shank / beef into the pot. Then add 1 Tsp of salt, and mix. Next add the ginger and garlic paste and the finely chopped green chilly. then add the turmeric powder and mix. Then add the tomatoes and mix,
- Next add 1/2 Cup of water, then cover and pressure cook for 15 minutes.
- In a pot of boiling water, add the rest of the salt. Add the Black Cardamom, add Cinnamon Sticks, add Bay leaves.
- Then add the rice into the water. Cook it 70% and then place into a strainer.
- After the 15 minutes, release the pressure and open up the Instant Pot. Then add the Yogurt Mixture into the instant pot, and mix together.
- Then add 4 Tsp of milk into the Saffron, and 3 Tsp of Milk into Red Food coloring.
- Now for the Layering process:
- First add everything from the instant pot into a pot over the stove, then add a layer of rice, and some fried onions, chopped cilantro, chopped mint, and repeat the steps with rice, fried onions, chopped cilantro and mint.
- Then cover with Foil and cook again 5 minutes on medium and 10 minutes on low,
- Serve hot and Enjoy!
