INGREDIENTS
- 25g Green Cardamom
- 25g Cloves
- 25g Cumin
- 25g Cinnamon
- 25g Star Anise
- 8g Bay Leaves
- 25g Coriander
- 25g Mace
- 30g Black Cardamom
- 50g Black Pepper
- 1 Nutmeg
- 1 Tsp Salt
- 4 Dry Chilies (Optional)
- 25g Black Cumin
- 10g Fennel Seeds

Method
- In a pan over med heat, add all of the spices to roast. Add a few at a time.
- Let the spices cool down completely after roasting.
- Add the spices into a blender and blend until the spices become a fine powder.
- Transfer the powder into a strainer and strain out.
- Transfer into a container for future use.
