INGREDIENTS

  • 25g Green Cardamom
  • 25g Cloves
  • 25g Cumin
  • 25g Cinnamon
  • 25g Star Anise
  • 8g Bay Leaves
  • 25g Coriander
  • 25g Mace 
  • 30g Black Cardamom
  • 50g Black Pepper
  • 1 Nutmeg
  • 1 Tsp Salt
  • 4 Dry Chilies (Optional)
  • 25g Black Cumin
  • 10g Fennel Seeds

Method
  1. In a pan over med heat, add all of the spices to roast. Add a few at a time.
  2. Let the spices cool down completely after roasting.
  3. Add the spices into a blender and blend until the spices become a fine powder.
  4. Transfer the powder into a strainer and strain out.
  5. Transfer into a container for future use.
