INGREDIENTS
- 12 Eggs Yolks
- 115 Grams / 40 Oz Cream Cheese
- 1 Cup Evaporated Milk
- 1 Cup Condensed Milk
- 1 Tsp Lime Juice
- 1 Tsp Vanilla Extract
- 1/2 Sugar for Caramel
Method
- Add the Cream Cheese to the bowl, then add the egg yolks and using a whisk, mix the cream cheese and the egg yolks together.
- Next add the Lime Juice and keep mixing. Then add the condensed milk, mix it together and add the evaporated milk and mix together.
- Add the sugar into a pot and let the sugar caramelize. Add some water as you do this.
- Then transfer the caramel into a container and coat the entire base of the container. Then using a strainer, add the pudding mixture into the container. Cover the container with a piece of foil.
- Then using a big pot over heat. Add about 2 cups of water and place the container with the pudding into the pot. Cover the pot and steam for 55 minutes on med - high heat
