Goan Dodol - Sousa's Kitchen

 


INGREDIENTS

  • 5 Cups Coconut 
  • 2 Cups Rice Flour
  • 1/2 Tsp Cardamom Powder
  • 1/2 Tsp Ghee
  • 1/2 Tsp Salt
  • 6 Cups Coconut Cream
  • 1 1/2 Cups Cashews
  • 500 g Palm Jaggery

Method
  1. Add the Jaggery into the blender, and then add the Coconut Milk into the mixer. Stir until smooth
  2. Mix the Salt and the Flour together, and then slowly add the mixture of the salt and flour into the mixer and mix together until all of the mixture is mixed in the blender.
  3. Strain the mixture into a pot and place it over the stove, on medium heat. Continue to stir. 
  4. Add the Coconut Cream and keep mixing together. 
  5. Add the Cashews and mix together
  6. Add the Cardamom powder and mix together. Keep mixing till the mixture thickens. 
  7. Place the Dodol in a baking pan covered in Ghee / Clarified Butter. 
  8. Serve and Enjoy!
