Sousa's Mixed Fruit and Nut Paste Christmas Cake - Sousa's Kitchen

 INGREDIENTS

  • 1 Cup Sugar
  • 1 1/2 Cup All Purpose Flour
  • 1/2 Cup Water
  • 1/2 Cup of Mixed Fruits and Nuts each
  • 1 tsp Vanilla Extract
  • 1/2 Cup Sugar for caramel
  • 2 Tbsp Molasses
  • 250 g Butter
  • 1 tsp Baking Powder
  • 1/2 tsp baking soda

Method
  1. Add the fruits and nuts to a glass container, then add the Brandy. Shake and let it soak overnight.
  2. In a pot add the sugar for the caramel. Stir until the sugar melts. After the sugar melts, turn off the heat and add some water. Then pour into a bowl and let it cool down.
  3. In a blender add the mixed fruits and nuts from the glass. Mix until it becomes a smooth paste. Pour into a bowl and set aside. 
  4. In a mixer, add 6 egg whites and whisk until they form a white foam. Set the foam in a bowl and set it aside. 
  5. In the mixer add the butter and mix. While mixing slowly add the sugar one spoon at a time. 
  6. Mix the Baking Soda and the Baking Powder together with the all purpose flour, then mix together. Add the flour into the mixture one spoon at a time. 
  7. Add the Vanilla Extract and the Molasses. Continue to mix.
  8. Add the Caramel Mixture from earlier and then add the Fruit and Nut paste. 
  9. Add the egg whites foam into the batter and mix by hand.
  10. Preheat the oven to 350º F and pour the batter into the Pan. Tap on the table to get rid of air bubbles.
  11. Fill a pan with 8 cups of water and place under the cake. Place the cake above the pan with water
  12. Bake at 350º F for 45 - 50 Minutes.
  13. Remove from the oven and let the cake cool down before cutting. 
  14. Serve and Enjoy!
