INGREDIENTS
- 1 Cup Sugar
- 1 1/2 Cup All Purpose Flour
- 1/2 Cup Water
- 1/2 Cup of Mixed Fruits and Nuts each
- 1 tsp Vanilla Extract
- 1/2 Cup Sugar for caramel
- 2 Tbsp Molasses
- 250 g Butter
- 1 tsp Baking Powder
- 1/2 tsp baking soda
Method
- Add the fruits and nuts to a glass container, then add the Brandy. Shake and let it soak overnight.
- In a pot add the sugar for the caramel. Stir until the sugar melts. After the sugar melts, turn off the heat and add some water. Then pour into a bowl and let it cool down.
- In a blender add the mixed fruits and nuts from the glass. Mix until it becomes a smooth paste. Pour into a bowl and set aside.
- In a mixer, add 6 egg whites and whisk until they form a white foam. Set the foam in a bowl and set it aside.
- In the mixer add the butter and mix. While mixing slowly add the sugar one spoon at a time.
- Mix the Baking Soda and the Baking Powder together with the all purpose flour, then mix together. Add the flour into the mixture one spoon at a time.
- Add the Vanilla Extract and the Molasses. Continue to mix.
- Add the Caramel Mixture from earlier and then add the Fruit and Nut paste.
- Add the egg whites foam into the batter and mix by hand.
- Preheat the oven to 350º F and pour the batter into the Pan. Tap on the table to get rid of air bubbles.
- Fill a pan with 8 cups of water and place under the cake. Place the cake above the pan with water
- Bake at 350º F for 45 - 50 Minutes.
- Remove from the oven and let the cake cool down before cutting.
