Semolina and Coconut Cake - Sousa's Kitchen

 


INGREDIENTS

  • 1 1/2 cup butter
  • 1 cup course semolina
  • 2 cups All Purpose Flour
  • 1 1/2 Cup Milk
  • 1 1/4 Sugar
  • 4 Large Eggs
  • 1/4 tsp Salt
  • 3 tsp Baking Powder
  • 1 Cup Grated Coconut
  • 50 grams golden raisins
  • 50 grams cashews

Method
  1. Mix the Semolina, coconut, and milk together.
  2. In a Kitchen Aid add butter, sugar, and mix for 2 -3 minutes on high. 
  3. Add 4 large eggs, and continue to blend until everything is fully mixed.  
  4. Combine all of the dry ingredients, and add into the mixer 1 spoon at a time, and continue to mix 
  5. Add the vanilla extract, golden raisins, and cashews and mix until everything is fully mixed.  
  6. Pour the batter into a baking pan. (Spread the batter evenly throughout your pan)
  7. Preheat the oven to 350° F or 175° C
  8. Place the cake into the oven and cook for 45 minutes, 
  9. After 45 minutes, remove the cake and allow for the cake to cool down before cutting into it. 
  10. Once cake is cooled down, Serve and Enjoy!
